INGREDIENTS:
- 1 kg Potatoes
- 300 g canned Tuna in oil
- 20 g Oven-roasted black olives
- 4 Hard-boiled eggs
- ¼ cup Roasted red peppers
- Stefano Extra virgin olive oil
- Parsley (optional)
- Salt
PREPARATION:
- Wash the potatoes and boil them whole with the skin in boiling water for about 40 minutes
- Drain the potatoes and let them cool.
- Take the eggs and place them in a pot filled with cold water. Turn on the heat, and once it starts boiling, continue cooking for 7 minutes. Then, place the eggs in cold water and peel them.
- Peel the potatoes and cut them into cubes. In the same salad bowl, add the drained tuna and season with olive oil, salt, and parsley (optional).
- Slice the olives, cut the roasted red peppers into small cubes, and add them to the potatoes. Mix well to combine all the ingredients. Add the sliced eggs on top and serve.
- If you don’t like parsley, you can replace it with oregano. If you prefer a creamier dressing, add some mayonnaise to the salad.
