INGREDIENTS:

  • 500g diced cantaloupe
  • 250g pre-cooked chickpeas
  • 250g diced bocconcini mozzarella
  • 2 tablespoons minced basil
  • 2 tablespoons minced chives
  • Zest and juice of 1 lime
  • 4 tablespoons of Stefano’s olive oil
  • Salt
  • Pepper

PREPARATION:

  1. In a large salad bowl, prepare the dressing by combining olive oil, salt, pepper, lime zest, and lime juice.
  2. Add the diced cantaloupe, pre-cooked chickpeas, diced bocconcini, minced basil, and minced chives. Mix everything well.
  3. Place the salad in the refrigerator and let it chill for 15 minutes before serving.
  4. For extra flavor, you can add some minced green onions and a drizzle of Balsamic vinegar.
  5. Serve this refreshing salad with barbecued meats or fish and some bruschetta bread.
