INGREDIENTS:
Stuffing:
- 140 gr toma cheese
- 140 gr ricotta cheese
- 140 gr gorgonzola
- 40 gr parmesan
- 2 egg yolks
- 2 tbsp parsley (minced)
- Nutmeg
- Salt and pepper
Sauce:
- 100 gr butter
- 1 cup of fresh herbs (parsley, basil, green onions, thyme)
- Parmesan cheese
PREPARATION:
- Place all of the stuffing ingredients in a food processor and blend until texture is smooth.
- Place one pasta sheet over the ravioli form.
- Fill each slot with a spoon of stuffing.
- Place another sheet of dough over the stuffing.
- Roll and press with a rolling pin to cut the ravioli.
- Place the ravioli in boiling water for approx. 2 minutes.
- Place cooked pasta in a warm oven dish and add sauce mixture.
- Mix well adding a little olive oil and serve.
