INGREDIENTS:
- 40g butter
- 2 tbsp. olive oil
- 1 onion
- 1 carrot
- ¼ cup celery
- 250 g lean ground veal
- 1 cup homemade tomato coulis or Stefano’s tomato basil sauce
- Salt and pepper
PREPARATION:
- Dice onion, celery and carrot.
- Heat butter and oil in a 28cm Granit sauté pan
- Add vegetables and ground veal
- Sauté until meat is colored and vegetables are soft
- Season to taste
- Add a drop of water and the tomato coulis
- Simmer for 1 hour on low heat
- Add mushrooms if desired
- To sweeten the taste, add a drop of cream at the end.
- There are several recipes for Bolognese sauce, but this is a quick version.
