INGREDIENTS:
- 3 boneless chicken breasts (cut lengthwise in 3) * Do not cut too thin
- 1/2 cup of flour
- 50g butter
- 5 tablespoons of olive oil
- Sea salt with fresh herbs
- 2 red shallots, sliced
- 2 red peppers, sliced
- 2 yellow peppers, sliced
- Juice of 2 lemons
PREPARATION:
- Sprinkle chicken pieces with sea salt with herbs, flour and set aside on a plate.
- Heat butter and olive oil in a 28cm Granit sauté pan.
- Sauté 3 pieces of chicken at a time. When they are colored, deglaze with lemon juice. Place on a plate. Repeat with remaining 6 chicken pieces.
- In the same still hot pan, add a little olive oil. Add your shallots and cook for 3 minutes.
- Then add your peppers and cook for 5 minutes.
- Put your pieces back into the peppers and shallots mixture. Mix well and continue cooking for 10 minutes or until the chicken is cooked.
- Remove from heat and serve
- You can serve with a green salad or white rice that you have previously cooked. *Stir-fry the cooked rice in the same pan (you will have removed the chicken mixture beforehand) this will give it a lot of flavor.
