INGREDIENTS:
- 400g penne
- 2 red peppers (drained and coarsely chopped)
- 3 green onions (sliced)
- ¼ cup almonds (roasted)
- 2 garlic cloves (whole)
- ¼ cup Stefano’s extra virgin olive oil
- 2 tbsp Parmesan
- 4 tbsp goat cheese
PREPARATION:
- Begin a large pot with salted water to a boil.
- Add the pasta.
- Meanwhile, place the rest of the ingredients in a food processor and mix until you obtain a creamy texture.
- Add a little pasta water if necessary.
- Put the pesto in a large serving bowl and add the cooked pasta.
- Mix well and finish with some freshly grated parmesan if needed.
