INGREDIENTS:

  • 400g penne
  • 2 red peppers (drained and coarsely chopped)
  • 3 green onions (sliced)
  • ¼ cup almonds (roasted)
  • 2 garlic cloves (whole)
  • ¼ cup Stefano’s extra virgin olive oil
  • 2 tbsp Parmesan
  • 4 tbsp goat cheese

PREPARATION:

  1. Begin a large pot with salted water to a boil. 
  2. Add the pasta.
  3. Meanwhile, place the rest of the ingredients in a food processor and mix until you obtain a creamy texture. 
  4. Add a little pasta water if necessary.
  5. Put the pesto in a large serving bowl and add the cooked pasta. 
  6. Mix well and finish with some freshly grated parmesan if needed.
