INGREDIENTS :
- 60 ml (¼ cup) Stefano extra virgin olive oil
- 2 garlic cloves, unpeeled and crushed
- 1 chili pepper, sliced
- 2 lb fresh cod fillets
- 500 ml (2 cups) Stefano marinara sauce
- 80 ml (⅓ cup) green olives, pitted and sliced
- 60 ml (¼ cup) capers, drained
- Salt, to taste
- 30 ml (2 tbsp) Italian parsley, chopped
Preparation :
- In a large frying pan, heat the olive oil over medium-high heat.
- Incorporate the garlic and chili and cook for 2 minutes. Add the fish and cook for 1 minute on each side, until golden.
- Add the marinara sauce, olives, and capers. Salt to taste.
- Allow the sauce to reduce 10 to 15 minutes without moving the fish.
- Garnish with the parsley and serve.
