INGREDIENTS :

  • 60 ml (¼ cup) Stefano extra virgin olive oil 
  • 2 garlic cloves, unpeeled and crushed
  • 1 chili pepper, sliced 
  • 2 lb fresh cod fillets 
  • 500 ml (2 cups) Stefano marinara sauce
  • 80 ml (⅓ cup) green olives, pitted and sliced 
  • 60 ml (¼ cup) capers, drained
  • Salt, to taste  
  • 30 ml (2 tbsp) Italian parsley, chopped 

Preparation :

  1. In a large frying pan, heat the olive oil over medium-high heat. 
  2. Incorporate the garlic and chili and cook for 2 minutes. Add the fish and cook for 1 minute on each side, until golden.
  3. Add the marinara sauce, olives, and capers. Salt to taste. 
  4. Allow the sauce to reduce 10 to 15 minutes without moving the fish. 
  5. Garnish with the parsley and serve.
