INGREDIENTS:

  • 700g Honey Crisp apples or pears (peeled, cored using a Cuisipro apple corer, and sliced ¼” thick)
  • Zest and juice of 1 lemon
  • 100g unsalted butter (at room temperature)
  • 2 eggs
  • 1 teaspoon cinnamon
  • 200g sugar
  • 200ml milk
  • 200g all-purpose flour
  • 1 pinch of salt
  • 1 packet of chemical yeast “Cucina della nonna” or 1 tablespoon baking powder and 1 tablespoon vanilla extract
  • Powdered sugar

PREPARATION:

  1. In a bowl, combine the sliced apples or pears with the lemon zest and lemon juice to prevent browning. Cover the bowl and refrigerate for 4 hours.
  2. Preheat the oven to 350°F (175°C).
  3. Using a hand blender, blend together the butter, eggs, sugar, cinnamon, and milk until the mixture becomes very liquid in consistency.
  4. In a separate bowl, mix together the dry ingredients: flour, yeast (or baking powder), and salt.
  5. Add the dry ingredient mixture to the liquid mixture and mix well until fully combined.
  6. Stir in the refrigerated apples or pears and mix thoroughly.
  7. Grease and flour a 24cm (9”) OXO cake mold, then pour the cake batter into it.
  8. Bake the cake for 1 hour, or until a toothpick inserted into the center comes out clean.
  9. Once the cake has cooled, sprinkle powdered sugar on top for an extra touch of sweetness.
  10. This cake is perfect for breakfast, packed lunches, or as a delightful dessert for both adults and children alike!
