PORTIONS: 12 PATTIES
INGREDIENTS:
- 700g boiled potatoes
- 2 eggs
- 125g parmesan cheese, grated
- 2 tbsp parsley, minced
- 1 tbsp chives, minced
- Salt, to taste
- Pepper, to taste
- 100g mortadella, shredded
- 100g provolone cheese, shredded
- 1 tablespoon extra-virgin olive oil
PREPARATION:
- In a bowl, mash the boiled potatoes with a potato masher.
- With a fork, mix until you get a smooth mixture without lumps.
- Add the 2 eggs, parmesan cheese, parsley, chives, salt, and pepper. Mix well.
- Divide the mixture into 12 portions and form balls.
- Flatten the balls to create oval discs.
- Stuff with the mortadella and provolone.
- Close the balls and flatten them to create small patties. (Dampen your hands if the mixture is sticky.)
- Grease a non-stick skillet with a bit of olive oil over medium heat.
- Place the patties in the skillet and cook for ten minutes, turning frequently.
- The patties are ready when they are lightly golden.
