PORTIONS: 12 PATTIES

INGREDIENTS:

  • 700g boiled potatoes
  • 2 eggs
  • 125g parmesan cheese, grated
  • 2 tbsp parsley, minced
  • 1 tbsp chives, minced
  • Salt, to taste
  • Pepper, to taste
  • 100g mortadella, shredded
  • 100g provolone cheese, shredded
  • 1 tablespoon extra-virgin olive oil

PREPARATION:

  1. In a bowl, mash the boiled potatoes with a potato masher.
  2. With a fork, mix until you get a smooth mixture without lumps.
  3. Add the 2 eggs, parmesan cheese, parsley, chives, salt, and pepper. Mix well.
  4. Divide the mixture into 12 portions and form balls.
  5. Flatten the balls to create oval discs.
  6. Stuff with the mortadella and provolone.
  7. Close the balls and flatten them to create small patties. (Dampen your hands if the mixture is sticky.)
  8. Grease a non-stick skillet with a bit of olive oil over medium heat.
  9. Place the patties in the skillet and cook for ten minutes, turning frequently.
  10. The patties are ready when they are lightly golden.
