INGREDIENTS:
- 300g butter at room temperature
- 300g sugar
- 200g egg yolk (around 10-11)
- 150g 00 flour
- 150g potato starch
- 120g egg white
- 2 lemon zests
- 2 orange zest
- Icing sugar
PREPARATION:
- Preheat oven at 350F
- In a bowl, Beat butter until smooth and creamy
- Incorporate yolks one at a time
- Always while mixing, add 250g sugar, flour, potato starch, lemon and orange zests
- In a separate bowl, beat egg whites with remaining 50g sugar.
- Slowly fold into previous mixture until well blended
- Butter and flour Bundt pan, pour mixture inside and bake for 40 minutes on middle rack
- Sprinkle icing sugar on top once cake has completely cooled
