INGREDIENTS:

  • 300g butter at room temperature
  • 300g sugar
  • 200g egg yolk (around 10-11)
  • 150g 00 flour
  • 150g potato starch
  • 120g egg white
  • 2 lemon zests
  • 2 orange zest
  • Icing sugar

PREPARATION:

  1. Preheat oven at 350F
  2. In a bowl, Beat butter until smooth and creamy
  3. Incorporate yolks one at a time
  4. Always while mixing, add 250g sugar, flour, potato starch, lemon and orange zests
  5. In a separate bowl, beat egg whites with remaining 50g sugar.
  6. Slowly fold into previous mixture until well blended
  7. Butter and flour Bundt pan, pour mixture inside and bake for 40 minutes on middle rack
  8. Sprinkle icing sugar on top once cake has completely cooled
