INGREDIENTS :

  • 60 ml (¼ cup) Stefano extra virgin olive oil
  • 1½ lb halibut, trimmed and cut into 2-inch pieces
  • 4 garlic cloves, minced
  • 125 ml (½ cup) white wine
  • 660 ml (1 jar) Stefano marinara sauce
  • 2.5 ml (½ tsp) chili flakes
  • 2 dozen littleneck clams, cleaned and scrubbed
  • 2 lb mussels, cleaned and scrubbed
  • 1 lb large shrimp, peeled and deveined
  • 30 ml (2 tbsp) Italian parsley, chopped

Preparation :

  1. In a large pot, heat the olive oil over medium-high heat.
  2. Add the halibut and brown it on all sides, about 3 to 4 minutes. Remove from the pot and set aside.
  3. Add the garlic to the pot. Cook, stirring occasionally, until soft and fragrant, about 5 minutes. Pour the white wine and cook until reduced by half.
  4. Add the marinara sauce and chili flakes. Simmer for 5 minutes.
  5. Return the fish to the pot and cook for 2 minutes.
  6. Add the clams, cover, and simmer until they begin to open, about 4 to 5 minutes.
  7. Add the mussels, cover, and cook until they begin to open, about 2 more minutes.
  8. Add the shrimps. Simmer uncovered until they are just cooked through, about 4 to 5 minutes. 
  9. Stir in the parsley and serve.
