INGREDIENTS :
- 60 ml (¼ cup) Stefano extra virgin olive oil
- 1½ lb halibut, trimmed and cut into 2-inch pieces
- 4 garlic cloves, minced
- 125 ml (½ cup) white wine
- 660 ml (1 jar) Stefano marinara sauce
- 2.5 ml (½ tsp) chili flakes
- 2 dozen littleneck clams, cleaned and scrubbed
- 2 lb mussels, cleaned and scrubbed
- 1 lb large shrimp, peeled and deveined
- 30 ml (2 tbsp) Italian parsley, chopped
Preparation :
- In a large pot, heat the olive oil over medium-high heat.
- Add the halibut and brown it on all sides, about 3 to 4 minutes. Remove from the pot and set aside.
- Add the garlic to the pot. Cook, stirring occasionally, until soft and fragrant, about 5 minutes. Pour the white wine and cook until reduced by half.
- Add the marinara sauce and chili flakes. Simmer for 5 minutes.
- Return the fish to the pot and cook for 2 minutes.
- Add the clams, cover, and simmer until they begin to open, about 4 to 5 minutes.
- Add the mussels, cover, and cook until they begin to open, about 2 more minutes.
- Add the shrimps. Simmer uncovered until they are just cooked through, about 4 to 5 minutes.
- Stir in the parsley and serve.
