- 350g of semolina
- 3/4 cup of water
PREPARATION:
- On your work surface, form a well with the durum wheat semolina. Add the water a little at a time and mix until you obtain a homogeneous, medium-firm ball of dough, adding more water if necessary.
- On a lightly floured surface, knead a few times. Cover with plastic wrap and let rest for 30 minutes.
- Roll into a 1 cm diameter ball and pass through the cavatelli machine.
- Excellent with Roasted garlic and dried tomato pesto
- And with Fagiolini in padella con pomodori
