INGREDIENTS:

  • 350g of semolina
  • 3/4 cup of water

PREPARATION:

  1. On your work surface, form a well with the durum wheat semolina.  Add the water a little at a time and mix until you obtain a homogeneous, medium-firm ball of dough, adding more water if necessary. 
  2. On a lightly floured surface, knead a few times. Cover with plastic wrap and let rest for 30 minutes.
  3. Roll into a 1 cm diameter ball and pass through the cavatelli machine.
  4. Excellent with Roasted garlic and dried tomato pesto
  5. And with Fagiolini in padella con pomodori
