INGREDIENTS:

  •  6 slices of country bread
  • 300g of goat cheese (caprino)
  • 6 cups of Butternut squash, peeled and diced
  • Sage leaves
  • Pumpkin seeds
  • 1 clove of garlic
  • Stefano’s Extra virgin olive oil
  • Salt
  • Pepper

PREPARATION:

  1. Preheat the oven to 375 ºF.
  2. Cut the squash into small cubes and sauté it in a pan with a drizzle of olive oil and a clove of garlic (in its skin), a pinch of salt, and two sage leaves until it becomes tender. Remove garlic. 
  3. Mix the goat cheese with some pepper until it becomes soft and creamy.
  4. Drizzle a bit of olive oil on the slices of bread and place on a baking sheet in the oven until they become nicely toasted.
  5. Spread the cheese on the warm bread, add the squash, sprinkle with pumpkin seeds, and add a few sage leaves as garnish.
  6. Drizzle will a little more olive oil to taste.
