INGREDIENTS:
- 6 slices of country bread
- 300g of goat cheese (caprino)
- 6 cups of Butternut squash, peeled and diced
- Sage leaves
- Pumpkin seeds
- 1 clove of garlic
- Stefano’s Extra virgin olive oil
- Salt
- Pepper
PREPARATION:
- Preheat the oven to 375 ºF.
- Cut the squash into small cubes and sauté it in a pan with a drizzle of olive oil and a clove of garlic (in its skin), a pinch of salt, and two sage leaves until it becomes tender. Remove garlic.
- Mix the goat cheese with some pepper until it becomes soft and creamy.
- Drizzle a bit of olive oil on the slices of bread and place on a baking sheet in the oven until they become nicely toasted.
- Spread the cheese on the warm bread, add the squash, sprinkle with pumpkin seeds, and add a few sage leaves as garnish.
- Drizzle will a little more olive oil to taste.
