INGREDIENTS:

  • 800g chicken breast (cut in small cubes)
  • 3 tablespoon Stefano’s olive oil
  • 1 lemon (juice only)
  • 11/2 tbsp Dijon mustard
  • 3 tbsp fresh basil (finely chopped with mezzaluna)
  • 3 tbsp fresh thyme (finely chopped with mezzaluna)
  • 1 tbsp dried oregano
  • 1 clove of garlic (finely chopped)
  • Salt and pepper
  • 12 Skewers (20cm)*

PREPARATION:

  1. In a bowl, mix together the olive oil, lemon juice, mustard, basil, thyme, oregano, garlic and season with salt and pepper.
  2. Add chicken and toss to coat. Cover and refrigerate for 1 hour. 
  3. Preheat the BBQ grill to high heat. Remove chicken from marinade and thread onto skewers.
  4. Lightly oil grill and cook for 10 minutes, turning on all sides.

* If using wooden skewers, soak them in water beforehand.
