INGREDIENTS:

  • Ground chicken breast 500 g
  • Zest of 2 oranges
  • Juice of 3 oranges
  • ½ cup vegetable or chicken broth
  • Grana Padano DOP cheese 80 g
  • 65 g rustic bread
  • Warm whole milk 100 ml
  • ½ clove of garlic, minced
  • 1 egg
  • 40 ml extra-virgin olive oil
  • 1 tablespoon chopped parsley
  • Fine salt, to taste
  • All-purpose flour, as needed

PREPARATION:

  1. Place the diced bread in a bowl with the warm milk and let it soften. In another bowl, put the ground chicken and the orange zest.
  2. Season with grated cheese, then add the egg, garlic, and softened bread.
  3. Add salt and mix the ingredients with your hands until you get a homogeneous mixture.
  4. Take a small portion of the mixture and shape it into a meatball the size of a walnut. Place the meatballs on a tray lined with parchment paper. Now coat each meatball with flour.
  5. Once finished, heat the oil in a pan, add the meatballs, and cook for 5 minutes.
  6. Turn them on all sides, and when they are nicely browned, deglaze with orange juice and broth. Add the parsley, cover with a lid, and cook over low heat for about 5 minutes.
  7. Finally, remove the lid, adjust the salt if necessary, increase the heat for another 5 minutes to finish cooking, and serve the orange chicken meatballs hot.
