INGREDIENTS:

  • 160g sugar
  • 350g flour 00
  • Pinch of salt
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp clove powder
  • 1 tsp freshly grated ginger
  • 1/2 tsp baking powder
  • 150g butter
  • 1 egg
  • 150g honey

Icing:

  • 1 egg white
  • 150g icing sugar

PREPARATION:

  1. In a bowl, sift sugar and flour together.
  2. While mixing with hand or stand mixer, add spices, baking powder, cold butter cut into cubes and honey. Your dough must look crumbly. 
  3. Add the egg and mix again until your dough becomes a ball.
  4. Wrap in plastic wrap and let firm up in the fridge for at least an hour.
  5. Once ready, flatten with a rolling pin and cut out the gingerbread men with cookie cutters.
  6. Bake for 10 to 15 minutes in a preheated 350• oven.
  7. Let cookies cool completely before decorating.

Icing:

  1. Beat egg white until it forms soft peaks.
  2. Slowly incorporate the icing sugar until it is well blended and makes a thick paste.
  3. Add a few drops of food colouring if desired and use a piping bag with a small nozzle to decorate your cookies.
