The extra-strong 2mm thick steel is ideal for searing, frying, grilling and browning. Thanks to its high thickness, this pan is suitable for powerful heat sources and ensures excellent heat diffusion.
Maillard reaction:
When heated, the sheet steel pan, when it reaches temperatures above 140 °C, causes the Maillard reaction. The food is seized on the surface, allowing the caramelization of its natural juices, which gives an on taste. A crust forms, preventing moisture from evaporating. The food becomes golden and crispy on the surface, melting and soft on the inside. The sheet pan is still ideal for searing meats, making crispy pancakes or perfect omelets.
For use on induction:
– use a moderate temperature
– do not use the BOOSTER mode
– do not overheat the iron pan when empty
