INGREDIENTS:
- 800g chicken breast (cut in small cubes)
- 3 tablespoon Stefano’s olive oil
- 1 lemon (juice only)
- 11/2 tbsp Dijon mustard
- 3 tbsp fresh basil (finely chopped with mezzaluna)
- 3 tbsp fresh thyme (finely chopped with mezzaluna)
- 1 tbsp dried oregano
- 1 clove of garlic (finely chopped)
- Salt and pepper
- 12 Skewers (20cm)*
PREPARATION:
- In a bowl, mix together the olive oil, lemon juice, mustard, basil, thyme, oregano, garlic and season with salt and pepper.
- Add chicken and toss to coat. Cover and refrigerate for 1 hour.
- Preheat the BBQ grill to high heat. Remove chicken from marinade and thread onto skewers.
- Lightly oil grill and cook for 10 minutes, turning on all sides.
* If using wooden skewers, soak them in water beforehand.
