INGREDIENTS:
- Ground chicken breast 500 g
- Zest of 2 oranges
- Juice of 3 oranges
- ½ cup vegetable or chicken broth
- Grana Padano DOP cheese 80 g
- 65 g rustic bread
- Warm whole milk 100 ml
- ½ clove of garlic, minced
- 1 egg
- 40 ml extra-virgin olive oil
- 1 tablespoon chopped parsley
- Fine salt, to taste
- All-purpose flour, as needed
PREPARATION:
- Place the diced bread in a bowl with the warm milk and let it soften. In another bowl, put the ground chicken and the orange zest.
- Season with grated cheese, then add the egg, garlic, and softened bread.
- Add salt and mix the ingredients with your hands until you get a homogeneous mixture.
- Take a small portion of the mixture and shape it into a meatball the size of a walnut. Place the meatballs on a tray lined with parchment paper. Now coat each meatball with flour.
- Once finished, heat the oil in a pan, add the meatballs, and cook for 5 minutes.
- Turn them on all sides, and when they are nicely browned, deglaze with orange juice and broth. Add the parsley, cover with a lid, and cook over low heat for about 5 minutes.
- Finally, remove the lid, adjust the salt if necessary, increase the heat for another 5 minutes to finish cooking, and serve the orange chicken meatballs hot.
