INGREDIENTS:
- 6 pork liver sausages (cut in 3 pieces) *
- 2 large white onions, sliced
- 1/2 bulb of large fennel or whole small fennel, cut in slice
- 8oz of red wine
- 1 liter of Stefano arrabbiata sauce or basil sauce
- 1 or 2 little peperoncini, according to our own taste
- 4 tbsp of olive oil
PREPARATION:
- In a 24 cm saucepan, heat the olive oil on medium.
- Add the onions and pepperoncini and increase the temperature.
- Once the onions are golden, add the sausages and cook until golden brown.
- Add the wine. Once the wine has evaporated, add the fennel and cook at high temperature for 3 minutes. Mix well
- Add the tomato sauce and reduce the temperature to medium and continue cooking uncovered for 20 minutes.
- *You can also use pork sausages

- This sauce is very good for people who love liver.
- Excellent with pasta or on a delicious polenta.
