INGREDIENTS:

  • 40g butter 
  • 2 tbsp. olive oil
  • 1 onion
  • 1 carrot
  • ¼ cup celery
  • 250 g lean ground veal
  • 1 cup homemade tomato coulis or Stefano’s tomato basil sauce
  • Salt and pepper

PREPARATION:

  1. Dice onion, celery and carrot.
  2. Heat butter and oil in a 28cm Granit sauté pan
  3. Add vegetables and ground veal
  4. Sauté until meat is colored and vegetables are soft
  5. Season to taste
  6. Add a drop of water and the tomato coulis
  7. Simmer for 1 hour on low heat
  8. Add mushrooms if desired
  9. To sweeten the taste, add a drop of cream at the end.
  10. There are several recipes for Bolognese sauce, but this is a quick version.
