INGREDIENTS:
- 500g zucchini (yellow or green)
- 3 tbsp Stefano’s olive oil
- Juice of 1 lime
- 1 hot chili pepper, finely sliced
- Sea salt
- 1 bag baby arugula (optional)
- 100g of parmesan cheese, shavings
PREPARATION:
- Trim zucchini ends and thinly slice length-wise with a mandoline. Place in a bowl.
- Mix together the olive oil, lime juice and salt then pour over the zucchini.
- Mix well and leave marinating for 5 minutes. Season with more salt if needed.
- Place arugula in a large serving dish.
- Lay the zucchini slices on top and add hot chili pepper, olive oil and parmesan shavings.
