INGREDIENTS:

  • 500g zucchini (yellow or green)
  • 3 tbsp Stefano’s olive oil 
  • Juice of 1 lime
  • 1  hot chili pepper, finely sliced
  • Sea salt
  • 1 bag baby arugula (optional)
  • 100g of parmesan cheese, shavings

PREPARATION:

  1. Trim zucchini ends and thinly slice length-wise with a mandoline. Place in a bowl.
  2. Mix together the olive oil, lime juice and salt then pour over the zucchini. 
  3. Mix well and leave marinating for 5 minutes. Season with more salt if needed.
  4. Place arugula in a large serving dish. 
  5. Lay the zucchini slices on top and add hot chili pepper, olive oil and parmesan shavings.
