INGREDIENTS:
- 700g Honey Crisp apples or pears (peeled, cored using a Cuisipro apple corer, and sliced ¼” thick)
- Zest and juice of 1 lemon
- 100g unsalted butter (at room temperature)
- 2 eggs
- 1 teaspoon cinnamon
- 200g sugar
- 200ml milk
- 200g all-purpose flour
- 1 pinch of salt
- 1 packet of chemical yeast “Cucina della nonna” or 1 tablespoon baking powder and 1 tablespoon vanilla extract
- Powdered sugar
PREPARATION:
- In a bowl, combine the sliced apples or pears with the lemon zest and lemon juice to prevent browning. Cover the bowl and refrigerate for 4 hours.
- Preheat the oven to 350°F (175°C).
- Using a hand blender, blend together the butter, eggs, sugar, cinnamon, and milk until the mixture becomes very liquid in consistency.
- In a separate bowl, mix together the dry ingredients: flour, yeast (or baking powder), and salt.
- Add the dry ingredient mixture to the liquid mixture and mix well until fully combined.
- Stir in the refrigerated apples or pears and mix thoroughly.
- Grease and flour a 24cm (9”) OXO cake mold, then pour the cake batter into it.
- Bake the cake for 1 hour, or until a toothpick inserted into the center comes out clean.
- Once the cake has cooled, sprinkle powdered sugar on top for an extra touch of sweetness.
