Ingredients:

For the Dough:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon granulated sugar
  • 1/2 cup cold unsalted butter, cut into small cubes
  • 1/4 cup ice water

For the Filling:

  • 4 cups fresh plums, pitted and sliced
  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/2 tsp cinnamon 
  • 1 tsp orange zest
  • 1 tsp lemon juice

For Assembly:

  • 1 egg, beaten (for egg wash)
  • 1 tablespoon granulated sugar (for sprinkling)
  • A handful of sliced almonds (optional, for topping)

Preparation:

Prepare the Dough:

In a mixing bowl, combine the flour, salt, and granulated sugar. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, and mix until the dough comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Preheat the Oven:

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

Prepare the Filling:

In a bowl, gently toss the sliced plums with granulated sugar, cornstarch, cinnamon,lemon juice and  orange zest. Set aside to macerate for about 15-20 minutes.

Roll Out the Dough:

On a lightly floured surface, roll out the chilled dough into a rough circle about 12 inches in diameter. Transfer the rolled-out dough onto the prepared baking sheet.

Assemble the Galette:

Arrange the macerated plum slices in the center of the dough, leaving about a 2-inch border all around. Fold the edges of the dough over the plum filling, pleating as you go, to create a rustic look.

Brush and Sprinkle:

Brush the edges of the dough with beaten egg to give the galette a beautiful golden color when baked. Sprinkle the edges with granulated sugar for a slightly sweet and crunchy crust. Optionally, scatter sliced almonds on top of the plum filling.

Bake:

Place the baking sheet in the preheated oven and bake for about 35-40 minutes, or until the crust is golden and the plum filling is bubbly.

Cool and Enjoy:

Allow the plum galette to cool slightly before serving. Serve warm or at room temperature, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
