INGREDIENTS:

  • 1 1/4 cup flour 00
  • 1/2 tsp. baking powder 
  • 1/2 tsp. salt
  • 3/4 cup milk
  • 1 vanilla pod
  • 6 tablespoons softened butter
  • 3/4 cup sugar
  • 2 eggs
  • 2 peaches

Icing:

  • 1 cup cream 35%
  • 1/2 cup mascarpone
  • 3 tablespoons sugar

PREPARATION:

  1. Preheat oven to 350F.
  2. In a bowl, mix flour, baking powder and salt.
  3. In another bowl, mix the butter, vanilla and sugar with the mixer for 3 minutes until the mixture whitens. Add eggs and mix well.
  4. Add the dry mixture and milk to the butter mixture and mix until batter is smooth.
  5. Peel and chop the peaches.
  6. Use a muffin pan and place a baking paper on the bottom of the molds.
  7. Put a tablespoon of mixture in bottom of pan, add pieces of peaches and finish with two tablespoons of mixture.
  8. Repeat 6 times.
  9. Bake for 25 minutes.

Icing:

  1. In a bowl, beat the 35% cream with a mixer. Reserve in the refrigerator.
  2. In another bowl, mix the mascarpone and sugar, add the cream and gently folding.
