INGREDIENTS:
- 1 1/4 cup flour 00
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 cup milk
- 1 vanilla pod
- 6 tablespoons softened butter
- 3/4 cup sugar
- 2 eggs
- 2 peaches
Icing:
- 1 cup cream 35%
- 1/2 cup mascarpone
- 3 tablespoons sugar
PREPARATION:
- Preheat oven to 350F.
- In a bowl, mix flour, baking powder and salt.
- In another bowl, mix the butter, vanilla and sugar with the mixer for 3 minutes until the mixture whitens. Add eggs and mix well.
- Add the dry mixture and milk to the butter mixture and mix until batter is smooth.
- Peel and chop the peaches.
- Use a muffin pan and place a baking paper on the bottom of the molds.
- Put a tablespoon of mixture in bottom of pan, add pieces of peaches and finish with two tablespoons of mixture.
- Repeat 6 times.
- Bake for 25 minutes.
Icing:
- In a bowl, beat the 35% cream with a mixer. Reserve in the refrigerator.
- In another bowl, mix the mascarpone and sugar, add the cream and gently folding.
