INGREDIENTS:
- 160g sugar
- 350g flour 00
- Pinch of salt
- 2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp clove powder
- 1 tsp freshly grated ginger
- 1/2 tsp baking powder
- 150g butter
- 1 egg
- 150g honey
Icing:
- 1 egg white
- 150g icing sugar
PREPARATION:
- In a bowl, sift sugar and flour together.
- While mixing with hand or stand mixer, add spices, baking powder, cold butter cut into cubes and honey. Your dough must look crumbly.
- Add the egg and mix again until your dough becomes a ball.
- Wrap in plastic wrap and let firm up in the fridge for at least an hour.
- Once ready, flatten with a rolling pin and cut out the gingerbread men with cookie cutters.
- Bake for 10 to 15 minutes in a preheated 350• oven.
- Let cookies cool completely before decorating.
Icing:
- Beat egg white until it forms soft peaks.
- Slowly incorporate the icing sugar until it is well blended and makes a thick paste.
- Add a few drops of food colouring if desired and use a piping bag with a small nozzle to decorate your cookies.
